First of all I absolutely loved this class. As someone who came into the class with a knowledge of Jamaican food I LOVED how you incorporated your personal stories as well as background on our culture. It is always more than just the food and this was really more an experience, a true taste of Jamaica that transcended the cuisine.

I appreciated how in this class, I learned to use traditional Jamaican spices in different ways. I especially loved learning how certain things (for example, sugar and cinnamon) enhance savory cuisine. I actually used the jerk recipe as a base for salmon yesterday and it was amazing! This was truly the taste of home I needed. Thanks for being a great teacher and chef.
